Gabrielle’s Seasonal Stir Fry

What I love about stir fry is the ability to take anything you have and turn it into a delicious one pan meal. Use anything you have on hand but take care to try and cut all your veggies the same size to ensure proper cooking. Let’s get started…

Julienne the following: 1 red pepper 1 yellow onion 1 bunch of collard greens 1/2 bunch of kale

Slice 1/2 zucchini in in half inch rounds

In a large sauté pan add 2 tablespoons of coconut oil to medium to high heat pan. First add the yellow onion and sauté for 3 minutes. As they start to brown from the heat add the red peppers and sliced zucchini. Continue cooking until your squash starts to char. (I love this flavor). Turning the zucchini over to ensure they don’t completely burn add the kale and collards and cook until bright green, turning frequently. Approximately another 4-5 minutes. Remove from heat and toss to ensure your veggies are well mixed. Arrange on your plate and add a little pink Himalayan sea salt to finish… Delicious Stir Fry!

*note I did not add any seasoning to the dish while cooking. Adding the ingredients at different times and introducing charring will produce an amazing flavor.
